About the Role
The Wells Carlton Hotel and Luxury Apartments offers an exquisite blend of pure luxury, unmatched craftsmanship, and world-class hospitality. We are seeking a meticulous and analytical Food & Beverages Controller to oversee our culinary and beverage financial operations. In this role, you will play a crucial part in maintaining profitability by monitoring costs, managing inventory, and ensuring strict adherence to internal financial controls across all our dining outlets, bars, and banqueting facilities in Abuja, Nigeria.
Key Responsibilities- Monitor food, beverage, and operating supplies costs to ensure alignment with established departmental budgets.
- Conduct regular physical stock counts, verify inventory movements, and investigate any discrepancies or excessive wastage.
- Review purchase orders, supplier invoices, receiving records, and market prices to ensure cost-efficiency.
- Calculate accurate food and beverage costs and assist management in setting profitable menu selling prices.
- Reconcile daily sales from restaurants, bars, room service, and banquets against POS and accounting records.
- Analyze actual costs versus budgeted targets, performing variance analysis and reporting significant deviations.
- Monitor spoilage, breakages, complimentary items, staff meals, and prevent potential revenue leakages.
- Prepare comprehensive daily, weekly, and monthly F&B cost control and performance reports for executive management.
- Collaborate with the Finance Manager and F&B Manager to develop accurate financial forecasts and operational budgets.
- Ensure compliance with internal control procedures for purchasing, receiving, storage, issuing, and cash handling.
- Bachelor's degree or HND in Accounting, Finance, Hospitality Management, or a related field.
- Minimum of 3 to 5 years of proven experience as an F&B Cost Controller in a reputable hotel or hospitality establishment.
- Strong proficiency in hotel management software, POS systems, and advanced Microsoft Excel.
- Exceptional analytical skills with high attention to detail and strong mathematical aptitude.
- In-depth knowledge of F&B inventory management, menu engineering, and cost-reduction strategies.
